    Prepare the Onions

    Peel the onions and slice them into 1/4 inch thick rings. Separate the rings and set them aside.

    Make the Batter

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and has a thick consistency.

    Heat the Oil

    In a deep pot or a heavy-bottomed skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into the oil; it should sizzle and float to the top.

    Dip and Fry

    Working in batches, dip each onion ring into the batter, allowing any excess to drip off. Carefully place the battered rings into the hot oil and fry until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

    In a small bowl, mix together the mayonnaise, smoked paprika, horseradish sauce, ketchup, and lemon juice until well combined.
