    Prepare the Wings

    Rinse the chicken wings under cold water and pat them dry with paper towels. This step is important for achieving a crispy texture.

    Season the Wings

    In a large bowl, combine baking powder, salt, black pepper, garlic powder, and paprika. Toss the wings in this mixture until they are evenly coated.

Cooking

    First Fry

    Heat 2 cups of vegetable oil in a deep fryer or a large heavy pot to 350°F (175°C). Carefully add half of the wings to the hot oil and fry for 10-12 minutes, or until golden brown and cooked through. Remove wings and place them on a paper towel-lined plate to drain excess oil.

    Rest the Wings

    Allow the wings to rest for about 10 minutes after the first fry. This helps to keep them juicy.

    Second Fry

    Increase the oil temperature to 375°F (190°C). Fry the wings again in batches for another 5-7 minutes until they are crispy and golden brown. Drain on paper towels once more.

Serving

    Arrange the crispy wings on a serving platter and serve with your choice of dipping sauces: Buffalo, Ranch, BBQ, or Honey Mustard. Enjoy!
