Steak Preparation

Season the Steak
Pat the flat-iron steak dry with paper towels. Season both sides generously with salt and black pepper.

Sear the Steak
In a large skillet, heat olive oil over medium-high heat. Add the steak and sear for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from heat and let rest for 5 minutes.
Bleu Cheese Horseradish Butter Preparation

Make the Butter
In a medium bowl, combine softened unsalted butter, bleu cheese, prepared horseradish, garlic powder, and chopped parsley. Mix until well combined. Transfer to a piece of plastic wrap, shape into a log, and refrigerate until firm, about 30 minutes.

Plate the Dish
On a serving plate, create a bed of grilled onions. Place the rested steak on top and slice it if desired. Top the steak with a generous slice of the bleu cheese horseradish butter. Serve with your choice of hand-cut fries or green beans on the side.
