Preparing the Fries

    Cutting the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips to make fries.

    Frying the Fries

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Carefully add the cut fries in batches and fry for 5-7 minutes or until golden brown and crispy.

    Seasoning the Fries

    Remove the fries from the oil, drain on paper towels, and sprinkle with salt to taste.

Making the Chili

    Cooking the Beef

    In a large pot over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.

    Add the chopped onion and minced garlic to the pot. Sauté for an additional 3-4 minutes until the onion is translucent.

    Stir in the canned diced tomatoes, kidney beans, chili powder, ground cumin, salt, and black pepper. Bring to a simmer and cook for 20-25 minutes, stirring occasionally.

Assembling the Dish

    On a large serving platter or individual plates, layer the hot fries, then generously spoon the chili over the top.

    Sprinkle the shredded cheddar cheese over the chili while it is still hot, allowing it to melt slightly.
