Preparing the Burger Patty

Mix the Beef
In a bowl, combine the ground beef, salt, and black pepper. Mix until just combined, being careful not to overwork the meat.

Form the Patty
Shape the meat mixture into a patty about ¾ inch thick. Make a small indentation in the center of the patty to prevent it from puffing up during cooking.
Cooking the Burger

Cook the Bacon
In a skillet over medium heat, cook the hickory smoked bacon until crispy. Remove and drain on paper towels.

In the last minute of cooking, place the American cheese and Tillamook cheddar cheese on top of the patty to melt.
