Method

Preparation

  1. 1

    Cook the Bacon

In a large skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove from the skillet and let drain on paper towels. Once cooled, chop into bite-sized pieces.

  2. 2

    Sauté Optional Ingredients

If using, add the chopped onion to the bacon grease in the skillet and sauté for 2-3 minutes until translucent. Add minced garlic and sauté for an additional minute until fragrant.

  3. 3

    Add Spinach

Add the fresh spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and set aside.

Mixing

  1. 4

    Beat Eggs

In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

  2. 5

    Combine Ingredients

Stir in the cooked bacon, sautéed spinach (and onion/garlic if used), and cheddar cheese into the egg mixture until evenly distributed.

Cooking

  1. 6

    Cook Frittata

Preheat your oven broiler. Pour the egg mixture into the skillet and cook on medium heat for about 5 minutes, or until the edges start to set. Transfer the skillet to the oven and broil for 3-5 minutes until the top is golden and the center is set.

  2. 7

    Serve

Remove the skillet from the oven and let cool for a few minutes. Slice into wedges and serve warm.
