    Prepare the Marinade

    In a large bowl, mix together olive oil, minced garlic, chopped thyme, chopped rosemary, salt, black pepper, and lemon juice to create the marinade.

    Marinate the Meats

    Cut the beef, pork, and lamb into manageable pieces and add them to the marinade. Ensure all meat pieces are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Meat

    Remove the meat from the marinade and let any excess drip off. Grill the beef shoulder steak for about 6-8 minutes per side, the pork shoulder for about 5-7 minutes per side, and the lamb chops for about 4-5 minutes per side, or until they reach your desired doneness.

    Rest and Serve

    Remove the grilled meats from the grill and let them rest for about 5 minutes before slicing. Serve hot, garnished with fresh herbs if desired.
