Shrimp and Marinade

Method

Marinate Shrimp

    Prepare the Marinade

    In a bowl, combine parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Mix well.

    Add the shrimp to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.

Prepare Vegetables

    Prepare Skewers

    While the shrimp is marinating, prepare the vegetables and soak wooden skewers in water for 30 minutes to prevent burning.

Cook the Skewers

    Assemble Skewers

    Thread marinated shrimp and vegetables onto skewers, alternating between shrimp and vegetable pieces.

    Grill Skewers

    Preheat a grill to medium-high heat. Grill the skewers for about 2-3 minutes on each side, until shrimp are cooked through.

Prepare Root Puree

    Cook Potatoes

    In a pot, boil the cubed potatoes until tender, about 15 minutes. Drain and return to the pot.

    Add butter, heavy cream, and salt to the potatoes. Mash until smooth and creamy.
