Each bite offers a rich, buttery flavor complemented by a sprinkle of sea salt and a hint of citrus. Begin by soaking the beef sweetbreads in cold water for about 1 to 2 hours. This helps to remove impurities. After soaking, gently rinse them under cold water and place them in a pot of simmering water for about 10 minutes. Drain and let them cool.
Once cooled, cut the sweetbreads into bite-sized pieces. Heat olive oil in a pan over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Then, add the sweetbreads, season with salt and black pepper, and cook until golden brown and crispy, about 5-7 minutes.
Remove the sweetbreads from the heat and drizzle with fresh lemon juice. Toss with chopped parsley and serve with thinly sliced red onion on the side.
