Prepare the Ribs

Season the beef short ribs with salt and black pepper on all sides.

Sear the Ribs

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the short ribs and sear until browned on all sides, about 5-6 minutes. Remove the ribs and set aside.

Sauté Vegetables

In the same pot, add the chopped onion and carrots. Sauté for about 4-5 minutes until softened. Add minced garlic and cook for an additional minute.

Combine Ingredients

Return the short ribs to the pot. Pour in the beef broth and red wine. Add the fresh thyme and bay leaves.

Simmer

Bring the mixture to a boil, then reduce heat to low. Cover and let simmer for 2.5 to 3 hours, or until the ribs are tender and falling off the bone.

Remove the ribs from the pot and let them rest for a few minutes. Serve with the vegetables and sauce spooned over the top.
