    Prepare the Eggplant Cream

    Preheat the oven to 200°C (400°F). Cut the eggplant in half, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Roast in the oven for about 30 minutes until soft. Once cool, scoop out the flesh and blend it in a food processor with 1 tablespoon of olive oil, minced garlic, and a pinch of salt until smooth.

    Marinate the Beef Tenderloin

    In a bowl, combine shaved beef tenderloin with remaining olive oil, garlic, cumin, coriander, paprika, salt, and pepper. Mix well and let it marinate for at least 30 minutes.

    Cook the Beef

    Heat a skillet over high heat. Add the marinated beef tenderloin and sauté for about 5-7 minutes until cooked through and slightly charred. Remove from heat.

    Assemble the Shawarma

    On a plate, spread a layer of eggplant cream, top with the cooked beef tenderloin, and place quail yolks on top. Drizzle with Dijon mustard before serving.
