Beef Tenderloin Preparation

    Sear the Beef

    Preheat the oven to 400°F (200°C). Heat olive oil in a large oven-proof skillet over medium-high heat. Season the beef tenderloin with salt, pepper, and rosemary. Sear the beef on all sides until browned, about 3-4 minutes per side.

    Roast in the Oven

    Transfer the skillet to the preheated oven and roast for 15-20 minutes for medium-rare, or until desired doneness. Use a meat thermometer to check the internal temperature (130°F for medium-rare).

    Rest the Meat

    Remove the beef from the oven and let it rest for at least 10 minutes before slicing.

Root Puree Preparation

    Cook the Vegetables

    Peel and chop the carrots and parsnips. Boil in salted water until tender, about 15-20 minutes.

    Make the Puree

    Drain the vegetables and transfer to a blender. Add butter, heavy cream, salt, and pepper. Blend until smooth and creamy.

Plating

    Slice the rested beef tenderloin and serve alongside the root puree, garnished with additional rosemary if desired.
