Preparation
Take the beef tenderloin out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. Pat it dry with paper towels.

Seasoning
Season the beef generously with salt and black pepper on all sides.

Searing
In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the beef and sear for about 4-5 minutes on each side until a nice crust forms.

Adding Flavor
Add the crushed garlic cloves, butter, and rosemary to the skillet. Baste the beef with the melted butter and herbs for an additional 2-3 minutes.

Finishing
Transfer the skillet to a preheated oven at 400°F (200°C) and roast for about 10-15 minutes for medium-rare, or until desired doneness is reached.

Resting
Remove the skillet from the oven and let the beef rest for 5-10 minutes before slicing.

Slice the Chateaubriand into thick pieces and serve with your choice of sides.
