Prepare the Cheesecake Filling

In a mixing bowl, beat the cream cheese and sugar until smooth. Add lemon juice, lemon zest, vanilla extract, and labneh. Mix until combined.

Whip the Cream

In another bowl, whip heavy cream and ground cinnamon until stiff peaks form. Gently fold this into the cheesecake mixture. Set aside.

Prepare the Phyllo Cigar

Preheat the oven to 350°F (175°C). Lay out phyllo sheets and brush each with melted butter. Sprinkle with chopped pistachios. Roll each sheet tightly to form a cigar shape and place on a baking sheet.

Bake the Phyllo Cigar

Bake the phyllo cigars for about 15-20 minutes or until golden brown. Remove from the oven and let cool.

Make the Honey Syrup

In a small saucepan, combine honey and water. Bring to a simmer and let it reduce slightly for about 5-7 minutes. Remove from heat and let cool.

Assemble the Cheesecake

In a springform pan, layer the cheesecake filling. Chill for at least 4 hours or overnight.

Serve

Once set, slice the cheesecake and serve with phyllo cigars on the side, drizzled with caramelized honey syrup.
