Make the Biscuits
Preheat your oven to 450°F (230°C). In a large bowl, combine the flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined. Turn the dough onto a floured surface and knead gently. Pat or roll out to about 1-inch thick. Cut into rounds and place on a baking sheet. Bake for 12-15 minutes or until golden brown.

Prepare the Gravy
In a skillet over medium heat, cook the breakfast sausage until browned. Remove the sausage and drain excess fat, leaving about 2 tablespoons in the skillet. Stir in the flour and cook for about 1 minute. Gradually whisk in the milk and heavy cream. Bring to a simmer and let it thicken for about 3-5 minutes. Stir in the sausage and season with salt, black pepper, and red pepper flakes.

Serve
Split the biscuits in half and ladle the sausage gravy generously over the top. Enjoy warm!
