Method

Shrimp Preparation

  1. 1

    Prep the Shrimp

In a large bowl, combine the all-purpose flour, cornstarch, Cajun seasoning, and salt. In a separate bowl, whisk together the eggs and buttermilk.

  2. 2

    Coat the Shrimp

Dip the popcorn shrimp into the egg mixture, then dredge in the flour mixture until well-coated.

  3. 3

    Fry the Shrimp

In a deep pan, heat the vegetable oil over medium-high heat. Fry the shrimp in batches until golden brown and crispy, about 3-4 minutes per batch. Drain on paper towels.

Avocado Ranch Slaw Preparation

  1. 4

    Mix the Slaw

In a large bowl, combine the shredded cabbage, shredded carrot, and chopped cilantro.

  2. 5

    Add Dressing

In another bowl, mix the mashed avocado, ranch dressing, lime juice, salt, and pepper. Add this dressing to the slaw mixture and toss until well combined.

Tacos Assembly

  1. 6

    Warm the Tortillas

Heat the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm and pliable.

  2. 7

    Assemble the Tacos

Place a generous amount of fried shrimp on each tortilla, top with the avocado ranch slaw, and drizzle with pepper jelly.

Cajun Chargrilled Corn Preparation

  1. 8

    Prep the Corn

Preheat your grill to medium-high heat. Brush the corn with olive oil and sprinkle with Cajun seasoning and salt.

  2. 9

    Grill the Corn

Place the corn on the grill and cook for about 10-15 minutes, turning occasionally, until charred and tender.
