Fried Popcorn Shrimp

Fried Popcorn Shrimp

    Prepare Shrimp

    In a bowl, combine the shrimp with salt, black pepper, paprika, and garlic powder. Allow to marinate for 15 minutes.

    Set Up Breading Stations

    In one bowl, place the all-purpose flour. In a second bowl, whisk together the eggs and milk. In a third bowl, combine the cornmeal with a pinch of salt.

    Bread the Shrimp

    Dredge each shrimp in flour, shake off excess, dip in egg mixture, and then coat with cornmeal.

    Fry the Shrimp

    In a large pot, heat vegetable oil over medium-high heat. Once hot, fry the shrimp in batches until golden brown, about 2-3 minutes. Remove and place on paper towels to drain excess oil.

Shrimp Étouffée

    Make the Roux

    In a large skillet, melt the butter over medium heat. Add the diced onion, bell pepper, and celery. Sauté until tender, about 5-7 minutes. Stir in the minced garlic and cook for another minute.

    Add Tomatoes and Seasoning

    Add the canned diced tomatoes, shrimp stock (or chicken broth), Cajun seasoning, salt, and black pepper. Bring to a simmer.

    Cook the Shrimp

    Add the shrimp to the skillet and simmer for 5-7 minutes, until the shrimp is cooked through.

    Serve

    To serve, place a scoop of cooked rice on a plate, spoon the shrimp étouffée over the rice, and top with fried popcorn shrimp. Garnish with chopped green onions.
