Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Bread
Cut the stale bread into 1-inch cubes and place them in a large mixing bowl.

Heat Cream and Chocolate
In a saucepan, combine the heavy cream, whole milk, and white chocolate chips. Heat over medium-low heat, stirring frequently until the chocolate is completely melted and the mixture is smooth.

Mix Eggs and Sugar
In another bowl, whisk together the eggs, granulated sugar, vanilla extract, and salt until well combined.

Combine Mixtures
Slowly pour the warm chocolate mixture into the egg mixture, whisking constantly to prevent the eggs from scrambling.

Combine with Bread
Pour the combined mixture over the bread cubes, ensuring all pieces are well coated. Let it sit for about 10-15 minutes to soak.

Transfer to Baking Dish
Grease a baking dish and pour the soaked bread mixture into it, spreading it evenly.

Add the brown sugar and heavy cream to the melted butter, stirring constantly until the mixture is smooth and begins to bubble.

Remove from heat and stir in the dark rum and vanilla extract. Allow to cool slightly before serving.
