Method

Preparation

  1. 1

    Prepare the Ingredients

Gather all the ingredients and prepare them as listed. Dice the onion, green bell pepper, celery, and garlic. Slice the okra.

  2. 2

    Cook the Rice

Cook the rice according to package instructions so it is ready to serve with the gumbo.

Cooking

  1. 3

    Make the Roux

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the diced onion, green bell pepper, and celery, cooking until softened, about 5-7 minutes. Stir in the minced garlic and cook for another 1-2 minutes.

  2. 4

    Add the Okra

Stir in the sliced okra and cook for an additional 5 minutes, stirring occasionally.

  3. 5

    Combine Liquids and Seasonings

Pour in the chicken broth and canned tomatoes with their juice. Add the bay leaves, Cajun seasoning, thyme, salt, black pepper, and cayenne pepper. Bring the mixture to a boil, then reduce heat to a simmer.

  4. 6

    Add Seafood

After the gumbo has simmered for 15 minutes, add the shrimp, crab meat, and crawfish tails. Cook for another 5-10 minutes, or until the shrimp are pink and cooked through.

  5. 7

    Serve

Remove bay leaves. Serve the gumbo over a scoop of cooked rice, garnished with chopped parsley and sliced green onions.
