    Prepare the Salad Base

    In a large bowl, combine the mixed greens, cherry tomatoes (halved), cucumber (sliced), red onion (thinly sliced), and avocado (diced).

    Grill the Protein

    Season the shrimp or chicken with salt and black pepper. Grill on medium-high heat for 5-7 minutes until cooked thoroughly and slightly charred.

    Dress the Salad

    In a small bowl, whisk together the olive oil and lemon juice. Drizzle over the salad mixture and toss gently to combine.

    Top with Protein

    Slice the grilled shrimp or chicken and place on top of the salad.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add chopped onion, celery, and bell pepper (the 'holy trinity') and sauté for 5-7 minutes until softened.

    Add the sliced sausage and minced garlic; cook for another 2-3 minutes until the sausage is browned.

    Stir in the canned tomatoes, Cajun seasoning, salt, and black pepper. Mix well.

    Add Stock and Simmer

    Pour in the chicken stock, add the bay leaves, and bring to a boil. Reduce heat to low and let simmer for 20 minutes.

    Add shrimp and okra to the pot, and simmer for an additional 10 minutes until the shrimp are pink and cooked through.
