Shrimp Poboy

Shrimp Poboy

    Prepare the Shrimp

    In a bowl, soak the peeled and deveined shrimp in buttermilk for about 30 minutes.

    Bread the Shrimp

    In another bowl, mix cornmeal with salt and black pepper. After soaking, dredge the shrimp in the cornmeal mixture until well coated.

    Fry the Shrimp

    Heat oil in a deep pan over medium-high heat. Once hot, carefully add the breaded shrimp and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

    Assemble the Poboy

    Slice the poboy rolls in half lengthwise. Spread mayonnaise and hot sauce on each half, then layer with shredded lettuce, fried shrimp, and tomato slices. Close the sandwich.

Seafood Gumbo

    Cook the Base

    In a large pot, heat a bit of oil over medium heat. Add the diced onion, green bell pepper, and celery (the 'holy trinity'). Sauté until softened, about 5-7 minutes.

    Add Sausage and Garlic

    Stir in the sliced andouille sausage and minced garlic. Cook for an additional 2-3 minutes until fragrant.

    Add Liquids and Seasonings

    Pour in the chicken broth, diced tomatoes, and add the okra, creole seasoning, bay leaves, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.

    Add Shrimp

    In the last 5 minutes of cooking, add the shrimp to the pot. Cook until the shrimp are pink and cooked through.

    Remove bay leaves, stir in cooked rice, and garnish with chopped parsley before serving.

Fries

    Prepare the Potatoes

    Wash and cut the potatoes into fry shapes. Soak them in cold water for 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat oil in a deep fryer or large pot over medium-high heat. Once hot, drain the potatoes and carefully add them to the oil. Fry until golden and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.
