Seafood Filling

Method

Prepare the Seafood Filling

  1. 1

    Cook the Shrimp

In a skillet over medium heat, add a splash of oil. Cook the shrimp for about 2-3 minutes until they turn pink and opaque. Remove from heat and chop into small pieces.

  2. 2

    Mix the Filling

In a mixing bowl, combine the cooked shrimp, crab meat, minced garlic, chopped green onion, mayonnaise, breadcrumbs, lemon juice, Old Bay seasoning, salt, and black pepper. Mix until well combined.

Prepare the Peppers

  1. 3

    Prepare the Bell Peppers

Preheat your grill to medium heat. While the grill is heating, take the halved bell peppers and lightly brush them with olive oil. Set aside.

Stuff and Grill

  1. 4

    Stuff the Peppers

Spoon the seafood filling generously into each halved bell pepper, pressing lightly to pack the filling.

  2. 5

    Grill the Stuffed Peppers

Place the stuffed peppers on the preheated grill and cover. Grill for about 15-20 minutes or until the peppers are tender and the filling is heated through.

Serve

  1. 6

    Garnish and Serve

Remove the stuffed peppers from the grill and let them cool slightly. Garnish with chopped fresh parsley and serve with lemon wedges on the side.
