Method

Preparation

  1. 1

    Prepare the Oysters

In a large bowl, pour the buttermilk over the fresh Louisiana oysters. Make sure they are well coated. Let them soak for at least 30 minutes to allow the flavor to absorb.

Breading

  1. 2

    Mix the Breading

In a separate bowl, combine the all-purpose flour, cornmeal, salt, black pepper, and cayenne pepper. Mix well until all dry ingredients are evenly distributed.

  2. 3

    Coat the Oysters

After soaking, remove the oysters from the buttermilk and allow excess liquid to drip off. Dredge each oyster in the breading mixture, ensuring they are fully coated. Place the breaded oysters on a plate or tray.

Frying

  1. 4

    Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat. The oil should be hot enough that a small drop of breading sizzles when added.

  2. 5

    Fry the Oysters

Carefully place the breaded oysters in the hot oil, being sure not to overcrowd the pan. Fry the oysters for about 2-3 minutes on each side or until they are golden brown and crispy.

  3. 6

    Drain the Oysters

Once cooked, remove the oysters from the oil and place them on a plate lined with paper towels to drain off excess oil.

Serving

  1. 7

    Plate and Serve

Arrange the fried oysters on a serving platter. Serve immediately with lemon wedges and cocktail sauce on the side.
