Thickening and Cream

Method

Preparation

  1. 1

    Sauté the Vegetables

In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion, celery, and green bell pepper, and sauté for about 5 minutes or until the vegetables are soft.

  2. 2

    Add Garlic and Tomato Paste

Stir in the minced garlic and tomato paste, cooking for another 2-3 minutes until fragrant.

Cooking

  1. 3

    Combine Ingredients

Stir in the crawfish tails, chicken broth, Cajun seasoning, bay leaves, salt, and black pepper. Bring the mixture to a boil.

  2. 4

    Simmer

Reduce the heat to low and let the bisque simmer for 30 minutes, stirring occasionally.

  3. 5

    Thicken the Bisque

In a separate bowl, make a roux by combining the flour with a bit of the hot broth until smooth. Add this roux to the bisque and stir well. Let it cook for an additional 10 minutes.

  4. 6

    Finish with Cream

Stir in the heavy cream, allowing it to heat through for about 5 minutes. Remove the bay leaves before serving.

Serving

  1. 7

    Garnish and Serve

Ladle the crawfish bisque into bowls and garnish with chopped green onions and parsley. Serve hot.
