    Melt the Chocolate

    In a heatproof bowl, combine 200g of dark chocolate. Set the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

    Whip the Heavy Cream

    In a separate mixing bowl, pour 300ml of heavy cream. Using an electric mixer, whip the cream until soft peaks form. Gradually add in 50g of granulated sugar and continue whipping until stiff peaks form. Set aside.

    Beat the Egg Whites

    In another clean bowl, whisk 3 large egg whites with a pinch of salt until soft peaks form. Continue to beat until stiff peaks form.

    Combine Ingredients

    Gently fold the melted chocolate into the whipped cream until well combined. Then, carefully fold in the beaten egg whites a little at a time, being cautious not to deflate the mixture. Finally, add 1 tsp of vanilla extract and fold gently.

    Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours to set. Serve chilled, garnished with chocolate shavings or whipped cream if desired.
