Crust Preparation

    Preheat your oven to 350°F (175°C).

    Make Crust Mixture

    In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

    Bake the crust in the preheated oven for 10 minutes, then remove and let cool.

Cheesecake Filling Preparation

    Beat Cream Cheese

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

    Add Sugar and Vanilla

    Gradually add the granulated sugar and vanilla extract, mixing until well incorporated.

    Incorporate Sour Cream

    Add the sour cream and mix until fully combined.

    Add the eggs one at a time, mixing on low speed after each addition until just blended. Do not overmix.

    Pour the cheesecake filling into the cooled crust and smooth the top with a spatula.

Baking the Cheesecake

    Bake the cheesecake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.

Topping Preparation (optional)

    In a small saucepan, combine fresh strawberries or blueberries, granulated sugar, cornstarch, and water. Cook over medium heat until the mixture thickens and the fruit is soft, about 5-7 minutes.

    Remove from heat and let cool before spreading over the chilled cheesecake.

    Once the cheesecake is chilled and the topping is prepared, spread the fruit topping over the cheesecake and slice to serve.
