Preparing Catfish

    Marinate the Catfish

    In a bowl, pour the buttermilk over the catfish fillets ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes.

    In a shallow dish, mix together cornmeal, flour, cayenne pepper, salt, and black pepper.

    Dredge the Catfish

    Remove catfish from buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, pressing gently to coat well.

    Fry the Catfish

    In a large skillet or deep fryer, heat oil over medium-high heat. Fry catfish fillets in batches for about 4-5 minutes on each side or until golden brown. Remove and drain on paper towels.
