Fried Catfish

    Prepare the Catfish

    Rinse the catfish fillets under cold water and pat them dry with paper towels.

    Season the Catfish

    In a shallow bowl, mix the buttermilk with 1 tablespoon of Cajun seasoning, then soak the catfish fillets in this mixture for at least 30 minutes.

    Prepare the Coating

    In another shallow bowl, combine the cornmeal, flour, remaining Cajun seasoning, salt, and pepper.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until hot.

    Coat the Catfish

    Remove the catfish from the buttermilk mixture and dredge each fillet in the cornmeal mixture, ensuring they are evenly coated.

    Fry the Catfish

    Carefully place the coated catfish fillets into the hot oil, frying for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Rinse the Beans

    Rinse the red beans under cold water and soak them overnight in water or at least for 8 hours.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and celery, and sauté until softened, about 5 minutes.

    Add Garlic and Beans

    Stir in the minced garlic and cook for another minute. Add the soaked red beans, vegetable broth, bay leaves, Cajun seasoning, salt, and pepper.

    Simmer the Beans

    Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 1.5 to 2 hours, or until the beans are tender.

    Prepare the Rice

    In a separate pot, cook the rice according to package instructions.

    Once the beans are tender and the rice is cooked, serve the fried catfish alongside the red beans and rice.
