Slow-Roasting the Turkey
Preheat your oven to 325°F (165°C). Place the turkey breast in a roasting pan and season with salt and pepper. Roast in the oven for approximately 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C). Let it rest for 20 minutes before shredding.

Making the Stuffing
In a large skillet, melt the butter over medium heat. Add the diced celery and onion, and cook until softened, about 5 minutes. Stir in the dried sage, thyme, salt, and pepper. Add the chicken broth and bring to a simmer. Add the stuffing mix, remove from heat, and stir until well combined. Let it sit for 5 minutes to absorb the liquid and fluff it up.

Slice the submarine rolls lengthwise, without cutting all the way through. Spread mayonnaise on the inside of each roll. Layer the pulled turkey on the bottom half, followed by a generous scoop of stuffing, and then top with cranberry sauce. Close the sandwich and press gently to compact the layers.
