Cooking the Chicken

Sear the Chicken
In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt, pepper, and dried thyme. Once the oil is hot, add the chicken breasts to the skillet. Sear for about 5-6 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it. Pour in the chicken broth and let it simmer for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.

Reduce the heat to low, and stir in the heavy cream and grated Parmesan cheese. Mix until the cheese has melted and the sauce is smooth. Return the chicken to the skillet and coat it well with the sauce. Let it simmer for an additional 5 minutes.

While the chicken is simmering, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

In another skillet, add a splash of olive oil over medium heat. Add the halved cherry tomatoes and spinach, sautéing until the spinach wilts and the tomatoes are soft, about 3-4 minutes. Season with salt and pepper to taste.
