Shrimp Po'boy

Aioli Sauce

Method

Preparing the Shrimp

    Marinate Shrimp

    In a bowl, combine shrimp with buttermilk and Cajun seasoning. Let it marinate for at least 30 minutes.

    Prepare Breading

    In two separate bowls, place cornmeal in one and a mixture of flour, eggs, and salt in another. Whisk the eggs and mix with flour until smooth.

    Coat Shrimp

    Dredge each shrimp first in the flour mixture, then dip in the cornmeal, ensuring they are well coated.

    Fry Shrimp

    Heat vegetable oil in a deep skillet over medium-high heat. Fry the shrimp in batches for about 2-3 minutes or until they are golden brown. Remove and drain on paper towels.

Making the Cole Slaw

    Combine Ingredients

    In a large bowl, combine shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

    Mix Well

    Toss everything together until the cabbage is well coated. Cover and refrigerate for at least 30 minutes before serving.

Preparing the Aioli Sauce

    Mix Aioli Ingredients

    In a small bowl, combine mayonnaise, minced garlic, lemon juice, and Dijon mustard. Stir until well mixed.

    Season

    Add salt to taste and mix again. Set aside until ready to use.

Assembling the Po'boy

    Prepare the Rolls

    Slice the French bread or hoagie rolls in half lengthwise, without cutting all the way through.

    Add Shrimp

    Place a generous amount of fried shrimp inside each roll.

    Top with Cole Slaw

    Add a handful of the prepared cole slaw on top of the shrimp.

    Drizzle Aioli

    Finish with a drizzle of the aioli sauce over the slaw.

    Serve

    Serve immediately while warm, and enjoy your delicious Shrimp Po'boy!
