Cook the Pasta
In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually about 10-12 minutes. Drain and set aside.

Prepare the Salmon
While the pasta is cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Season the salmon fillets with salt and black pepper. Once the oil is hot, place the salmon in the skillet and cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Remove from the skillet and flake into bite-sized pieces.

Make the Sauce
In the same skillet, add another tablespoon of olive oil and the minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese, lemon juice, and red pepper flakes. Allow the sauce to cook for 3-4 minutes until it thickens slightly.

Combine Ingredients
Add the cooked penne pasta to the sauce in the skillet and toss to coat. Gently fold in the flaked salmon and fresh spinach. Cook for an additional 2-3 minutes until the spinach wilts and everything is heated through.

Serve the salmon pasta hot, garnished with extra Parmesan cheese and a sprinkle of black pepper if desired.
