    Slice the Potatoes

    Wash and peel the Russet potatoes. Using a mandoline slicer or a sharp knife, slice the potatoes into thin, even rounds (about 1/16 inch thick).

    Soak the Potato Slices

    Place the sliced potatoes in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch, which will help them become crispier when fried.

Cooking

    Heat the Oil

    In a large, deep pot or a fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a single potato slice; if it sizzles and bubbles, the oil is ready.

    Fry the Potatoes

    Remove the potato slices from the water and pat them dry with paper towels to remove excess moisture. Carefully place a handful of potato slices into the hot oil, being careful not to overcrowd the pot. Fry for about 3-4 minutes or until golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the chips from the oil and place them on a plate lined with paper towels to drain excess oil. While they are still hot, sprinkle with sea salt and black pepper to taste.

    Repeat

    Continue frying the remaining potato slices in batches, ensuring the oil temperature remains consistent. Adjust the heat as necessary.

    Once all the potato slices are fried and seasoned, serve them warm as a side dish to your favorite sub or enjoy them as a snack on their own.
