Prepare the Coleslaw

Mix the Coleslaw Ingredients
In a large bowl, combine the shredded cabbage and carrots. In a separate small bowl, whisk together the vegan mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Combine and Chill
Pour the dressing over the cabbage and carrots, tossing until everything is well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Prepare the Russian Dressing

Mix the Russian Dressing Ingredients
In a small bowl, combine the vegan mayonnaise, ketchup, sweet pickle relish, apple cider vinegar, and onion powder. Mix thoroughly until well combined.
Assemble the Sandwich

Spread the Mayo
Take the whole wheat sandwich buns and spread 1 tablespoon of vegan mayo on each bottom half.

Place 2 slices of plant-based turkey on each bun, followed by 1 slice of vegan provolone cheese and a generous scoop of coleslaw.
