    Prepare the Potatoes

    Peel the Russet potatoes and cut them into quarters. Rinse them under cold water.

    Cook the Potatoes

    In a large pot, add the quartered potatoes and fill it with enough water to cover them. Add 1 tsp of salt. Bring to a boil over high heat, then reduce to medium heat and simmer for about 15-20 minutes or until the potatoes are tender when pierced with a fork.

    Drain the Potatoes

    Once cooked, drain the potatoes in a colander and let them sit for a minute to release excess steam.

    Mash the Potatoes

    Return the drained potatoes to the pot. Add the butter, milk, garlic powder, and pepper. Use a potato masher or fork to mash the potatoes until smooth and creamy. Adjust the seasoning with more salt or pepper if desired.

Gravy

    Make the Roux

    In a saucepan, melt 4 tbsp of butter over medium heat. Once melted, whisk in the flour and cook for about 2 minutes, stirring constantly until it turns a light golden brown.

    Add Broth

    Slowly whisk in the chicken or vegetable broth, ensuring there are no lumps. Continue to whisk until the mixture thickens, about 5 minutes.

    Season the Gravy

    Stir in the soy sauce, salt, and pepper. Let the gravy simmer for an additional 2-3 minutes to enhance the flavors. Adjust seasoning as needed.
