Method
Preparation
- 1
Prepare the Okra
Rinse the fresh okra under cold water and pat dry with paper towels. Trim the ends and slice the okra into 1/2-inch thick rounds.
- 2
Make the Batter
In a mixing bowl, combine the cornmeal, all-purpose flour, salt, black pepper, and cayenne pepper. Mix well until evenly combined.
- 3
Coat the Okra
Pour the buttermilk into a shallow dish. Dip each okra slice into the buttermilk, allowing any excess to drip off, then dredge in the cornmeal mixture until well coated. Set aside on a plate.
Frying
- 4
Heat the Oil
In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of okra; it should sizzle immediately.
- 5
Fry the Okra
Carefully add the coated okra slices to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown and crispy, turning occasionally for even cooking.
- 6
Drain the Okra
Using a slotted spoon, remove the fried okra from the oil and transfer to a plate lined with paper towels to drain excess oil. Sprinkle with additional salt if desired.
