Wash and Prepare Collard Greens
Rinse the collard greens thoroughly under cold water to remove any dirt. Remove the tough stems and chop the leaves into bite-sized pieces.

Peel and finely chop the garlic and onion. Remove the seeds from the red bell pepper and chop it into small pieces.

In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and red bell pepper. Sauté for about 5 minutes, or until the onions are translucent and fragrant.
