Turkey Preparation

    Prep the Turkey

    Preheat your oven to 325°F (163°C). Rinse the whole turkey with cold water and pat it dry with paper towels.

    Season the Turkey

    In a small bowl, mix together olive oil, salt, black pepper, garlic powder, onion powder, and paprika. Rub this mixture all over the turkey, including under the skin.

    Roast the Turkey

    Place the turkey on a roasting rack in a roasting pan. Roast in the preheated oven for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (75°C).

    Rest and Pull

    Once cooked, remove the turkey from the oven and let it rest for 30 minutes. After resting, pull the turkey meat apart using two forks.

Coleslaw Preparation

    Mix the Coleslaw

    In a large mixing bowl, combine shredded cabbage and grated carrots.

    Make the Dressing

    In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

    Combine

    Pour the dressing over the cabbage and carrots. Toss until the vegetables are well coated. Refrigerate for at least 30 minutes to allow flavors to meld.

Assembly

    Prepare the Rolls

    Slice the sandwich rolls in half and lay them open on a clean surface.

    Layer the Ingredients

    On the bottom half of each roll, layer a generous amount of pulled turkey, followed by a slice of provolone cheese, a scoop of coleslaw, and a drizzle of Russian dressing. Spread mayonnaise on the top half of the roll.

    Close the Sandwich

    Place the top half of the roll on the assembled sandwich. Press down gently to secure.

    Serve

    Serve the Cole Turkey sandwiches immediately, or wrap them up to enjoy later.
