Slice the Steak
Thinly slice the ribeye steak against the grain into strips. This will ensure tenderness.

Cook the Vegetables
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onion, green bell pepper, and mushrooms. Season with salt and black pepper. Sauté for 5-7 minutes until the vegetables are tender and slightly caramelized. Remove from the skillet and set aside.

Cook the Steak
In the same skillet, add the remaining tablespoon of olive oil and increase the heat to medium-high. Add the sliced ribeye steak, season with salt and pepper, and cook for about 3-5 minutes, stirring frequently until browned and cooked through.

Prepare the Rolls
Slice the hoagie rolls lengthwise without cutting all the way through. Optionally, toast them lightly on a skillet if desired.

Fill the Rolls
Using a spatula, carefully scoop the cheesy steak and vegetable mixture and fill each hoagie roll generously. Optionally, top with hot or sweet peppers.
