    Prepare the Chicken

    Thinly slice the grilled chicken breast if not already sliced. Season with salt and black pepper.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook for 2-3 minutes until they start to soften.

    Add Mushrooms and Peppers

    Add the sliced mushrooms and hot or sweet peppers to the skillet. Sauté for an additional 5-7 minutes until the vegetables are tender.

    Combine Chicken and Vegetables

    Add the seasoned chicken slices to the skillet with the sautéed vegetables. Cook for about 3-4 minutes, stirring frequently, until the chicken is heated through.

    Melt the Cheese

    Layer the provolone cheese over the chicken and vegetable mixture. Cover the skillet and let it cook for another 2-3 minutes, until the cheese has melted.

Assembly

    Prepare the Hoagie Rolls

    While the cheese is melting, slice the hoagie rolls lengthwise without cutting all the way through. Toast them lightly if desired.

    Once the cheese has melted, remove the skillet from heat. Spoon the chicken and vegetable mixture into each hoagie roll.
