Method
Catfish Preparation
- 1
Soak the Catfish
In a large bowl, soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.
- 2
Prepare the Coating
In a shallow dish, combine cornmeal, flour, paprika, salt, and black pepper.
- 3
Coat the Catfish
Remove the catfish from the buttermilk and dredge each fillet in the cornmeal mixture until evenly coated.
- 4
Fry the Catfish
In a deep skillet, heat oil over medium-high heat. Fry the coated catfish for 4-5 minutes on each side or until golden brown and cooked through. Drain on paper towels.
Shrimp Preparation
- 5
Sauté the Garlic
In a large skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- 6
Cook the Shrimp
Add shrimp to the skillet, sprinkle with Old Bay seasoning, and pour in lemon juice. Cook for about 3-4 minutes until shrimp are pink and opaque.
- 7
Finish and Serve
Remove from heat, stir in chopped parsley, and serve hot.
Wings Preparation
- 8
Prepare the Wings
In a bowl, combine chicken wings with garlic powder, salt, and black pepper. Toss to coat the wings evenly.
- 9
Bake the Wings
Preheat the oven to 400°F (200°C). Arrange wings in a single layer on a baking sheet and bake for 40-45 minutes until crispy and cooked through.
- 10
Prepare the Sauce
In a small saucepan, melt butter over low heat. Once melted, mix in hot sauce and stir until combined.
- 11
Coat the Wings
Remove wings from the oven, toss them in the hot sauce mixture until well coated, and serve immediately.
