Method
Catfish Preparation

Prepare the Catfish
Rinse the catfish fillets under cold water and pat them dry with paper towels.

Coat the Fillets
In a shallow bowl, mix the cornmeal, flour, salt, and black pepper. In another bowl, whisk the eggs and buttermilk together. Dip each catfish fillet first into the egg mixture, then into the cornmeal mixture to coat well.

Fry the Catfish
Heat the vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the coated catfish fillets. Fry for about 4-5 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.
Cole Slaw Preparation

Combine the Vegetables
In a large bowl, combine the shredded cabbage and carrots.

Make the Dressing
In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Mix Together
Pour the dressing over the cabbage and carrots, and toss until everything is well coated. Refrigerate for at least 30 minutes before serving.

In a small bowl, combine the mayonnaise, minced garlic, lemon juice, salt, and black pepper. Stir until well blended.
