Marinating the Pork

Prepare the Marinade
In a blender, combine the pineapple juice, white vinegar, achiote paste, garlic cloves, dried oregano, cumin, salt, black pepper, and olive oil. Blend until smooth.

Marinate the Pork
Cut the pork shoulder into small chunks and place it in a large bowl. Pour the marinade over the pork, ensuring all pieces are well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Rest the Pork
Once cooked, remove the pork from the heat and let it rest for 5-10 minutes. Then, chop it into small bite-sized pieces.

In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.
