For the Marinade

Method

For the Marinade

1

Prepare the Marinade

In a large mixing bowl, whisk together the olive oil, minced garlic, lime juice, paprika, cumin, salt, and black pepper until well combined. This will infuse all the flavors into the meat.

For the Meat Skewers

2

Marinate the Meat

Place the beef, pork, and chicken cubes into the bowl with the marinade. Toss them well to ensure they are evenly coated. Cover and let marinate in the refrigerator for at least 2 hours, or overnight for deeper flavor.

3

Assemble the Skewers

After marinating, thread the marinated meat cubes, bell pepper squares, red onion squares, and cherry tomatoes onto the soaked wooden skewers, alternating between different ingredients for a colorful presentation.

4

Grill the Skewers

Preheat your grill to medium-high heat. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the meat is cooked through and has nice grill marks. Ensure the internal temperature reaches 165°F (75°C) for chicken and 145°F (63°C) for beef and pork.

For the Sauce

5

Prepare the Sauce

In a small bowl, combine the mayonnaise, minced garlic, chili sauce, lemon juice, salt, and black pepper. Mix well until smooth. This sauce will complement the skewers perfectly.
