Preparation

    Prepare the Beans

    Rinse the Brazilian black beans under cold water and soak them overnight in a large bowl of water.

    Chop the Vegetables

    Dice the onions, bell pepper, and mince the garlic cloves. Set aside.

    Prepare the Chorizo

    Slice the chorizo sausage into thin rounds and set aside.

Cooking

    Cook the Base

    In a large pot, heat a tablespoon of oil over medium heat. Add chopped onions and garlic, sauté until the onions are translucent (about 5 minutes).

    Add Chorizo and Vegetables

    Add the sliced chorizo, diced bell pepper, and corn to the pot. Cook for another 5-7 minutes, stirring occasionally.

    Add Beans and Seasoning

    Drain and rinse the soaked black beans, then add them to the pot along with diced tomatoes, cumin, paprika, salt, and black pepper. Stir well.

    Simmer the Dish

    Pour in enough water to cover the mixture, bring it to a boil, then reduce the heat to low. Cover and let it simmer for about 30-40 minutes, or until the beans are tender.

    Finish with Lime and Cilantro

    Once cooked, stir in lime juice and chopped cilantro. Adjust seasoning to taste and remove from heat.
