Preparing the Steak

    Marinate the Steak

    In a medium bowl, combine the olive oil, salt, and black pepper. Add the steak and rub the marinade all over. Let it sit for at least 30 minutes or up to overnight in the refrigerator for better flavor.

    Grill the Steak

    Preheat your grill to medium-high heat. Once hot, place the marinated steak on the grill. Cook for about 5-7 minutes on each side for medium-rare, or until desired doneness is achieved. Remove from the grill and let it rest for about 5 minutes before slicing.

    Slice the Steak

    After resting, slice the steak against the grain into thin strips.

    Sauté the Onions

    While the steak is grilling, slice the onion thinly. In a skillet over medium heat, add a little olive oil and sauté the onions until they are soft and slightly caramelized, about 5-7 minutes.

    Warm the Tortillas

    In a separate pan, warm the corn tortillas over medium heat for about 30 seconds on each side until they are pliable.

    Assemble the Tacos

    On each warm tortilla, layer some sliced steak, sautéed onions, and chopped fresh cilantro. Squeeze lime juice over the top if desired.
