    Prepare the Vegetables

    Wash and dice the poblano pepper, onion, and garlic cloves.

    Sauté the Vegetables

    In a skillet, heat the olive oil over medium heat. Add the diced poblano, onion, and garlic. Sauté until the onion is translucent and the peppers are softened, about 5-7 minutes.

Cheese Mixture

    Melt the Cheeses

    In the same skillet, reduce heat to low and add the Monterey Jack cheese, Chihuahua cheese, and cream cheese. Stir continuously until the cheeses are fully melted and combined.

    Season the Mixture

    Add the ground cumin, salt, and black pepper to the melted cheese mixture. Stir in chopped cilantro and mix well.

Serving

    Serve

    Transfer the queso fundido to a serving dish and serve hot with warmed flour tortillas on the side. Enjoy dipping the tortillas into the melted cheese mixture.
