Marinade Preparation

    Mix Marinade Ingredients

    In a mixing bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, salt, black pepper, and paprika. Whisk until well combined.

    Marinate the Meat

    Place the chicken breasts or flank steak in a resealable plastic bag or shallow dish. Pour the marinade over the meat, ensuring it's evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Grilling

    Prepare the Vegetables

    While the meat is marinating, slice the bell peppers and onion into thin strips.

    Heat the Grill

    Preheat your grill or grill pan over medium-high heat.

    Grill the Meat

    Remove the meat from the marinade and discard the marinade. Grill the meat for about 6-7 minutes per side, or until fully cooked and juices run clear. For flank steak, cook to medium-rare (about 130°F) for best tenderness.

    Grill the Vegetables

    Once the meat is done, add the sliced bell peppers and onion to the grill. Grill for about 5-7 minutes, stirring occasionally, until they are tender and slightly charred.

    Slice the Meat

    Remove the grilled meat from the grill and let it rest for a few minutes. Slice it into thin strips against the grain.

    Warm the tortillas on the grill for about 30 seconds on each side or in a microwave until heated through.

    On a serving platter, arrange the sliced meat and grilled vegetables. Serve with warm tortillas and optional toppings like sour cream, shredded cheese, guacamole, fresh cilantro, and salsa.
