Method

Preparing Tropical Pickled Cabbage

    Mix and Marinate

    In a bowl, combine the shredded cabbage, grated carrot, apple cider vinegar, sugar, salt, and pineapple juice. Mix well and let it marinate for at least 30 minutes in the refrigerator.

Making Pico de Gallo

    Combine Ingredients

    In a bowl, mix the diced tomatoes, red onion, chopped cilantro, lime juice, and salt. Adjust seasoning to taste and set aside.

Preparing Chipotle Sauce

    Mix Sauce Ingredients

    In a small bowl, combine the mayonnaise, minced chipotle peppers, and lime juice. Mix until smooth and set aside.

Cooking the Fish

    Prepare Fish

    Pat the fish fillets dry with paper towels. In a bowl, whisk together the eggs and milk. In a separate bowl, mix the flour, cornmeal, salt, and black pepper.

    Coat Fish

    Dip each fish fillet into the egg mixture, then coat with the flour mixture. Ensure even coverage.

    Fry Fish

    In a large frying pan, heat the oil over medium-high heat. Fry the coated fish fillets for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Assembling Tacos

    Warm Tortillas

    Heat the flour tortillas in a dry skillet or wrap them in a damp paper towel and microwave for about 30 seconds.

    Build the Tacos

    Place a piece of fried fish on each tortilla. Top with tropical pickled cabbage, pico de gallo, and a drizzle of chipotle sauce. Serve immediately.
