Preparation

Marinate Chicken

In a large bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, lemon juice, salt, and black pepper. Add the chicken breasts and coat them well. Let them marinate for at least 30 minutes.

Prepare Vegetables

While the chicken is marinating, chop the bell peppers, zucchini, and eggplant into bite-sized pieces. Set aside.

Cooking

Grill Chicken

Preheat your grill to medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side or until cooked through. Once done, slice the chicken and set aside.

Sauté Vegetables

In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped vegetables and sauté for about 8-10 minutes or until tender. Season with salt and pepper to taste.

Combine with Wine

Pour the bottle of California red wine into the skillet with the sautéed vegetables and bring to a simmer. Allow it to reduce slightly for about 5 minutes.

Serving

Plate the Dish

On a serving platter, arrange the sautéed vegetables and top with sliced grilled chicken. Drizzle with the red wine sauce from the skillet.

Garnish

Sprinkle with chopped parsley and serve with lemon wedges on the side.
